Cha ca
What’s in it: fish, garlic, ginger, turmeric, and dill. Why we love it: A wonderful street food, Cha Ca offers you a metaphor into the Vietnamese culinary philosophy: simple morsels and cuts, expertly seasoned to become something extraordinary. This dish, is a wonderful introduction to Vietnam.
Banh Xeo
What’s in it: egg, pork, shrimp, bean sprouts, fresh herbs, fish sauce, lettuce leaves, rice paper. Why we love it: Perhaps the most fun dish to eat in Vietnam, this pancake-like crepe is bulging with ingredients and busting with flavor. Rolled and dunked in fish sauce it makes for one of the best dining and communal experiences as this item is sold at wonderful hole in the wall venues all throughout Vietnam.
Goi Cuon
What’s in it: Rice Paper, Salad greens, herbs, pork, shrimp, and cilantro. Why we love it: Another of Vietnam’s rolled wonders; Goi Cuon is another reminder that Vietnamese cuisine is literally bursting with flavor. The clean and clear taste of the rice paper contrasts superbly with the sharp flavors of the cilantro and protein, all complimented with a fresh dip into Fish Sauce.
Nom Hoa Chuoi
What’s in it: Banana flowers, green papaya, carrots, cilantro, chicken, peanuts, fish sauce. Why we love it: A excellent reminder of the power of South East Asian Salads, Nom Hoa Chui gives its eaters a intoxicating mix of spicy and salty, soft and firm with the banana flower and chicken acting as a counterpoint to the stiff bite of green papaya, carrots and peanuts. A must try for those who wish to compare Vietnamese salads to their Thai counterparts.
Bun Bo Nam Bo
What’s in it: wheat noodles, beef, peanuts, bean sprouts, mint, shallots, fish sauce, and chili peppers. Why we love it: If you become overloaded on Pho, this broth-less noodle dish is a great remedy. Without broth the eater is able to focus far more on the individual ingredients that make this soup come together, with fish sauce standing in for the anise broth found in Pho for a juxtaposition of flavor.
Ca Tim Kho To
What’s in it: Eggplant, tomatoes, soy sauce, sugar, meat (depending on the diner’s preference).Why we love it: This classic dish is a reminder that eggplant does not need to be boring. Combined with the above ingredients and cooked on a simmering heat in a clay pot Ca Tim Kho To acquires a wonderful savory, smoky and sweet quality that makes for one of the most unique treats in Vietnamese vegetarian dining.
Banh mi
What’s in it: French Baguette, pate, cheese, cold cuts, pickled vegetables, sausage, terrine, cilantro, chili sauce. Why we love it: It is our favorite sandwich in the world. Trying a Banh Mi in Vietnam is one of the ‘bucket-list’ items for foodies and non-foodies alike, one bite and your life will never be the same again.

Au Lac House (Hanoi)
Tran Hung Dao is amongst the most beautiful streets in Hanoi where Au Lac House is located.  The restaurant’s physical structure is a draw in itself, located within a French colonial garden house it offers one of the most peaceful views in Hanoi and is a welcome respite from the busy streets.
Terrasse Metropole (Hanoi)
Located in the landmark hotel of the Sofitel Metropole, you will have a chance to eat in a historic setting that harkens back to the French colonial times of old.  The dining here is of the standard of the Metropole’s guests, fit for presidents, ambassadors or other leaders of the world.The fare here is central Vietnamese cuisine executed to an immaculate standard.
Koto (Hanoi)
Overlooking the beautiful Temple of Literature, Koto offers basic fare with a deep and moving mission.  KOTO is a not-for-profit project providing career training and guidance to disadvantaged children and teens.A must for those who wish to do their small part of healing Vietnam’s wounds.
Com Niêu (Ho Chi Minh)
Name checked by Monsieur Bourdain of ‘No Reservations’ fame, this restaurant specializes in clay pot baked rice, which explodes across the table and over the heads of the customers after being deliberately (and theatrically) shattered by the staff.  Making for a wonderful metaphor of Saigon’s humble but explosively delicious fare.
Monsoon (Ho Chi Minh)
For those who wish to travel without leaving Vietnam, The Monsoon Restaurant & Bar serves a wide variety of the regional favorites from Myanmar, Thailand, Laos, Cambodia, and of course, Vietnam. The setting is beautiful, contained within a French Villa and courtyard; you will be able to traipse across the region and their cultures, all by simply picking up a menu.
Dong Pho (Ho Chi Minh)
This Pho restaurant, visited by no less a food fanatic than Bill Clinton, is considered by many to serve the best bowl of this steaming delicacy in all of Saigon. Despite its international acclaim, prices are kept quite reasonable, keeping both clamoring locals and traveling foodies raving and coming back for more.
