GONG BAO CHICKEN
What’s in it: diced chicken, dried chilli, fried peanuts, mashed garlic, XO sauce  Why we love it: Known by foreigners as Kung Pao Chicken (or further mutated in the United States as ‘General Tso’s’) This Sichuan dish has won the world over with its unique blend of spicy sweet and savoury flavours. For any foodie or first time China guest, this is a must try for their time in China.
MA PO DOU FU
What’s in it: Tofu, ground beef (optional), chopped onions, Sichuan peppers. Why we love it: Ma Po Dou Fu is a wonderful example of how important a component texture becomes in the perfect Chinese dish. Silky smooth tofu is covered with the spicy and savoury combination of beef, onions and most importantly mouth-watering Sichuan peppers. Making for a dish that’s light and heavy, a combination that wonderfully confuses the senses, leaving the eater wanting more and more.
Peking Roasted Duck
What’s in it: Roast Duck, Scallions, rice pancakes, sweet bean sauce. Why we love it: Perhaps the most famous dish from China (and certainly among the most picturesque, when hanging on display from windows). Peking Duck is another must try for any foodie or first timer in China. Restaurants are fiercely protective over their preparation method, seasoning and even the crispiness of the duck itself. We are happy to provide you recommendations as to where to enjoy Beijing’s favourite dish.
Liang Ban Huang Gua
What’s in it: cucumber, vinegar, and garlic, salt. Why we love it: a testament of Chinese cooking’s wonderful simplicity, Liang Ban Huang Gua is a humble dish of pickled cucumbers with the sour and strong flavours of garlic and vinegar grafted on. Combined however, the dish is elevated beyond the sum of its ingredients, to a perfect counterpoint to cut through the strong flavours of China’s protein dishes. A must order side dish for those who appreciate big and clean flavours.
XiaolongBao
What’s in it: Wheat dumplings, meat stock, pork and/or shrimp. Why we love it: A classic Shanghai staple that’s as fun to eat as its is to taste, XiaolongBao or ‘soup dumplings, are packed with flavor that literally will ‘explode in your mouth’ when you bite in. This dish is so revered within China it can be found at the most ‘white gloves’ of venues to the humblest hole –in-the-wall mom and pop shops. A must try for any first time guest of Shanghai.
Guo Bao Rou
What’s in it: Wheat Fried Pork, Carrots, Soy Sauce, Green Onion, Chili peppers, sweet syrup. Why we love it: For a taste of Northern China, and for Chinese food that needs no translation to the Western palate, a hearty plate of fried Guo Bao Rou is always pleasing for guests of China. This sweet and sticky meal, will remind westerners of the Chinese food back home, along with providing a delicious meal and contrast of textures between the flow of the sweet syrup and the crunchy tension of the fried pork.

Ultraviolet (Shanghai)
More theme park than restaurant, Chef Paul Pairet’s Ultraviolet is an experience for the heart, mind, body and palate. With a waitlist that can stretch months, it has truly become Asia’s most exclusive restaurant and for good reason. Ten diners only per night are welcomed into the Bund location to begin their dining adventure, each course becomes a miniature thrill ride as they are accompanied by films and effects projected onto all four surrounding walls.
Tingliguan (Beijing)
We note this restaurant for its incredible location inside the Summer Palace. Painstakingly recreating dishes from the Ming and Qing Era, Tingliguan offers diners a chance to relive history and, for one day, dine as the emperors and empresses of China did in the days of yore.
Lung King Heen (Hong Kong)
For the best Cantonese cooking in Hong Kong, head to Lung King Heen. Here the reason guests rave consistently over this venue is due to the freshness of the ingredients and the execution of combining the many flavors which make up Cantonese cooking. Taking an ingredient like sea cucumber or crispy eel and making it a delicacy to any palate is no small feat. This culinary wizardry, coupled with a stunning view of Victoria Harbor from Lung King Heen’s 4th story location in the Four seasons hotel, make this a dining experience in Hong Kong without equal as well as a great reminder of the city’s still vibrant Cantonese history.
Longjing Manor (Hangzhou)
Set amid tea plantations, away from the crowds of West Lake, Longjing Manor offers guests a true treat of farm to table dining and a welcome respite from China’s crowds. The beautiful Al fresco dining here is paired with light and clean Chinese favorites. This lack of grease and atmosphere of a rumbling dining hall offers travelers a chance to ‘step back in time’ away from modern China and into the philosophy of dining which has ruled these lands for thousands of years. A must try for those who wish to cleanse both their palates and revitalize their spirits.
